Cream Soup Mix

Another way to save money is to make things from scratch. I always have this soup mix on hand. I use it in any recipes that call for any kind of condensed cream soup. It works great!


1 c powered milk
3/4 c cornstarch
1/4 c instant chicken bouillon cubes
2 T dried onion flakes
1/2 t pepper
1 teaspoon parsley

Mix all ingredients in a food processor or blender, store in an airtight container.

To use as a substitute for one can of cream soup, combine 1/3 c soup mix and 1 1/4 c water. Cook in a saucepan over low heat until thick.

This recipe will make the equivalent of 9 cans of condensed soup.

Chicken & Bowties

Lipton used to make boxed meals once upon a time called “Sizzle & Stir”. There was one that my kids just loved, but then they discontinued the product. This is my homemade version that is easy and inexpensive.

1 lb. boneless, skinless chicken breasts cut into 1 inch cubes
12 oz bowtie (farfalle) pasta
2 T cooking oil
2 T seasoned salt (such as Lawry’s)
6 C chicken broth
1 clove peeled minced garlic
2 T butter (or margarine)
1 cup baby carrots (or cut up carrots)
1/3 c cream soup mix


1. In a large sauté pan, heat oil over medium-high heat. Add chicken and sprinkle with seasoned salt. Cook & stir until chicken is no longer pink.
2. Add garlic, chicken broth and butter; bring to a boil.
3. Add pasta and carrots; reduce heat.
4. Cover and simmer for 12-14 minutes, or until pasta and carrots are cooked to desired firmness.
5. Let stand a few minutes before serving (sauce with thicken as it stands).

Sausage & Tortellini Soup

Serve this soup with a crusty loaf of bread for a hearty, delicious meal.

1 lb sweet Italian sausage
2 onions, chopped
2 carrots, diced
2 celery ribs, diced
2 garlic cloves, chopped
2 zucchini, cut into ½ in chunks
2 c chicken broth
1 can diced tomatoes (14.5 oz), undrained
1 package frozen cheese tortellini
Grated parmesan cheese

1. Remove casing from sausage; discard. Break up sausages and brown over medium-high heat in a large pot or Dutch oven.

2. Add onion, carrot, celery, and garlic; cook until soft, about 8 minutes, stirring often.

3. Add broth, tomatoes, and zucchini; bring to a boil. Reduce heat to low and simmer uncovered 10 minutes.

4. Bring back to a boil; add tortellini. Cook for 3 minutes, being careful not to overcook or the tortellini will open up. Serve with parmesan cheese, if desired.
